| Flourless Almond Torte |

3 Large eggs at room temp., separate into two bowls 1/4 tsp. sea salt Pinch of Cream of Tartar 1/3 c. maple syrup 2 c. almond meal (7oz) 1/2 tsp. vanilla extract Fresh fruit for topping 350 F Line an 8 inch cake pan with parchment paper. Lightly brush edges with oil. Beat whites. salt and cream of tartar until stiff (not dry) peaks form. Transfer egg white to a clean bowl. In old bowl, beat yolks. Gradually add maple syrup and beat on high until thick and foamy (4-5 min). Beat in almond meal and vanilla extract. Fold in 1/4 egg white mixture to lighten mixture. Gently fold in remaining egg whites. Pour batter into pan and smooth top with spatula. Bake 35 min until light brown and toothpick comes out clean. Cool on rack for 10 minutes. Once cool wedge, drizzle with maple syrup and serve with fruit on top. |
